2019 No.6 Shiraz Cabernet

The fruit for this wine was sourced from our Well Cabernet, Well Shiraz and small parcels from the dry grown and hand picked Creek and 1891 Old Shiraz.  

The fruit was destemmed (no crushers) and then allowed a cool fermentation over 11 days. Pressed to stainless tanks then matured in a combination of new American oak hogsheads and seasoned American and French barriques.

This wine is dark in colour. Aromatically complex, it shows blood plums and pepper with fresh thyme. 

The palate is highly structured with black currant and firm tannins. A long finish.

Deep, dark red colour with a purple tint, the initial bouquet completely dominated by charred oak aromas. The palate is also dominated by the same oak flavours and this adds a hard astringency to the mouth-feel.
